Gajar ka Halwa

Ingredients

1 kg Carrots
1 litre Milk
1 teaspoon Cardamom seeds
3/4 cup Water
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
450 grams Sugar

Method

Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
Add the milk. Cook on a low flame for 1 hour stirring occasionally.
Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins.
Mix well. Remove from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.


GAJAR KA HALWA


About 8 Servings.

INGREDIENTS:
1) Carrots: 1 1/2 KG (shred & then cook them in there own water until dry).
2) Almonds & Pistachios: As desired (finely chopped).
3) Walnuts: 1/2 cup (finely chopped).
4) Small Cardamom: Abt 8 (finely crushed).
5) Dry Milk: 2 cups.
6) Oil/Ghee/Butter: 1 cup.
7) Sugar: 1 1/2 cup.

PREPARATION:
Let the Carrots cook in there own water until dry & after cooling up, slightly crush them, heat up Oil (or Ghee/Butter) in a Wok or in a huge saucepan, then add in Cardamoms, when aroma starts to come then add Carrots in it, cook them well while stirring constantly, when the color starts to change add Milk, Sugar & Walnuts and stir it quite fast.
When the Oil starts to seperate itself that means Halwa is ready.

GARNISHING:
Spread Halwa in a dish and sprinkle it with the Almonds & Pistachios, when it cools off then you can also cut it into pieces or leave it as it is, it can be eaten both cold or warm.
