Harisa ( a Kashmiri dish)

Harisa ( a Kashmiri dish)

Ingredients :
1 kilo bone less mutton or beef
3-4 teaspoon black pepper
½ chetank mong ke sabat daal ( chilkay wali)
½ chetank rice
1 pao wheat ( agar haleem wale ho tu behter hay )
ginger , garlic, onion, salt, oil ( all of them according to need)

method :
fry 1 big onion chopped in oil. when it turns golden, put ginger, garlic and meat.jub meat ka apna pani dry ho jai tu aur water daal ker gala lain. Phir stock main say gala hoa meat naykaal ker mota mota chop ker lain.chop kernya k baad dobara stock main daal dain aur saath main socked wheat bhe daal dain. Rice aur mong ke daal ko saath boil ker lain aur phir osay bhe meat aur wheat k saath galnay k leay daal dain. Jub wheat gal jai tu wooden masher ( the 1 we useto mash haleem) k saath khoob mash karain,until in subka paste sa bun jai. Paste aysa ho ke wheat ke danay danay feel hoon aur na he itna danay danay ho k daal aur water alag alag nazar aain. Now add salt and pepper.
Heat some oil and golden brown onion in it. Onions naykal ker oil hareesay per daal dain aur half onions os k oper sprinkle ker dain aur rest half kese dish main naykaal ker saath rakh dain. Hareesa is ready.

Hareesa ( recipe no2)

Ingredients ;
1 cup wheat ka daleeya ( porridge)
½ cup rice
½ cup mong ke daal
½ kilo boneless mutton or beef
chopped onion
2 tab sp ginger garlic paste
salt to taste
1 tea sp black pepper
4 tea sp haleem masala

method :
oil main onions brown ker k meat daal dain. Salt, black pepper, ginger garlic paste bhe daal dain. Thora sa fry karain phir pehlay say socked rice, wheat aur mong ke daal bhe daal dain. Andazay say pani dalain k sub cheezain gal jain. Haleem
masala bhe daal dain. When its fully cooked tu oil and onions ka tarka laga dain, jaysa oper wale resipe main hay.
