White Chocolate Ice cream...

Ingredients

200g white chocolate, broken into pieces
1 tin 39g Sweetened Condensed Milk, chilled
2 ½ cups or 600ml liquid whipping cream, chilled
2 teaspoons vanilla powder
Zest of 1 small lemon
1 cup or 200g glazed dried fruits


Preparation:


Carefully melt the chocolate in a bowl over hot water, remove and set aside to cool slightly.
Combine Sweetened Condensed Milk, liquid cream and vanilla powder in a bowl of electric mixer. Beat over medium high speed for 10 minutes or until thick and creamy.
Carefully fold in the melted chocolate, lemon zest and the dried fruits.
Pour the mixture into foil lined 12 cm x 23 cm loaf pan. Cover with cling film and freeze for at least 12 hours until set.
Cut into slices to serve.
