Firni ( Rice Pudding )




1/4 cup rice, washed, soaked in water and ground to a coarse paste
5 cups milk
3/4 cup sugar
1/4 tsp kewra essence
2 tbsp chopped pistachios
1 tbsp chopped almonds

Rose petals for garnish



Heat the milk and bring to a boil. Add the sugar and let it dissolve. Now add the rice paste and let it cook, while stirring all the while. Once the rice is cooked it will become a nice and creamy mixture. Remove from heat and add the kewra essence, pistachios and almonds. Top with a rose petal and more pistachios before serving.
