Banana Coladas

3 ripe bananas, peeled and quartered
18 ounces unsweetened pineapple juice
4 ounces coconut milk
2 cups ice
1/4 cup toasted coconut

Place bananas and pineapple juice in a blender and blend until
smooth. Add coconut milk, and ice and mix until frothy. Garnish
with toasted coconut.

Homemade Cola
1 tbsp sugar
1 tsp vanilla extract
1/8 tsp cinnamon
1/2 tsp bottled lime juice
1/2 cup soda

Mix well and add ice.

This will look very different than real cola. Be sure they have plenty of ice in them. You may need to
vary the amounts of sugar and lime juice a bit until your cola is
as sweet as real cola. It will be interesting as you vary the
ingredients little by little until you are able to match very
closely the taste of real cola. (This recipe only makes 1/2 cup,
so vary the amounts as necessary for larger quantities.)

Strawberry Coolers
1 pound strawberries, rinsed, drained, hulled and halved
1 cup sugar
1 cup water
1/4 cup lime juice
soda

In medium saucepan, combine sugar, water and lime juice and boil
for 2 minutes. Add berries and bring mixture back to boiling. Stir
in mint and lime zest. Cover and let stand 10 minutes. Strain,
without crushing or pressing. Cover and chill.

Pour syrup into tall glass. Add soda to taste. About 4
tablespoons syrup to 1 cup soda

Note: This definitely fizzes up and makes a thick layer of foam
when the syrup is fresh, so go slowly in the pouring.
